Traditional Slovak quiche with sheep cheese, bacon and onions
Do you know this "Slovak pizza from centre Slovakia"? Our ancestors improved its recipe over the centuries and baked it together with bread as a food from leftover bread dough. One day a week was designated for baking bread and kindling, when supplies for the whole week were baked. Today we know this traditional bread pudding with sheep cheese, cream and bacon, but also with cheese or sausage from fairs. We look forward to seeing him at markets and parties, but they don't happen every week. Although it is usually baked in the oven (that's why it's also called a pan, Tarte flambée/ Flammkuchen ), you can bake it at home in the oven whenever you feel like it. Thanks to Orava kitchen appliances, this is no science.

Ingredients:
Yeast: 150 g lukewarm milk, 1 teaspoon granulated sugar, ½ yeast
Dough: 500 g plain flour, 1 tsp salt, 1 egg, 3 tbsp oil, 2 boiled potatoes, grease for greasing the baking sheet
Spreading mixture: 400 g sour cream, 250 g cheese, 250 g bacon, 2 eggs, 1 onion, salt, dill, chives
How to do it:
- Yeast: Mix sugar into lukewarm milk and crumble the yeast. Leave it in a warm place for about 15 minutes to let the yeast form.
- Dough: Sift the flour into a bowl, add salt, egg, oil and mashed boiled potatoes. Then add the yeast and make a soft dough. If necessary, you can add lukewarm milk.
- Cover the dough in progress with a towel and let it rise in a warm place for 1 hour.
- Heat the oven to 180 0C and grease the baking sheet with grease.
- Roll out the risen dough on a greased baking sheet. Mix the cream with the cheese, eggs and add salt to taste. Spread the mixture on the dough, sprinkle with chopped bacon and onion. Sprinkle the top with dill and chives to taste. Bake in a heated oven for 20 minutes.
- Immediately after baking, while the lighter is still warm, serve it with, for example, buttermilk or milk. Bon appetit!
