Bake a Cottage Cheese Easter Lamb Cake

Where It Comes From

The lamb is a spiritual symbol that has been associated with sacrifice to God since ancient times. Lambs were offered as sacrifices as early as antiquity, for example during the Jewish holiday of Passover. In Christianity, the lamb symbolizes Jesus Christ – the “Lamb of God who takes away the sins of the world.” Since not everyone could afford meat, sweet lamb-shaped cakes gradually became popular, especially in Central Europe. Today, they are a traditional part of festive tables in Slovakia, the Czech Republic, Poland, and Germany.

Tips for Success

A good baking mold is essential. Grease it thoroughly with butter and dust it with flour or breadcrumbs. For detailed areas, use a brush to ensure the butter reaches every corner.

To make the batter light and fluffy, beat the egg whites separately and gently fold them in. Do not open the oven during the first 25 minutes of baking. If the top browns too quickly, cover it with foil.

After baking, let the cake cool for about 10–15 minutes before removing it from the mold.

For easier mixing, you can use the Orava SL-109 electric hand mixer.

Moist Cottage Cheese Easter Lamb Cake

Ingredients:

  • 250 g fine cottage cheese
  • 3 eggs
  • 150 g sugar
  • 1 packet vanilla sugar
  • 100 ml oil (or melted butter)
  • 200 g all-purpose flour
  • 1 baking powder
  • zest of 1 lemon
  • a pinch of salt

Instructions:

  1. Beat the eggs with sugar and vanilla sugar until fluffy.
  2. Add cottage cheese, oil, and lemon zest, then mix well.
  3. Combine flour, baking powder, and salt.
  4. Gently fold the dry ingredients into the batter.
  5. Pour the batter into the prepared mold.
  6. Bake at 160–170 °C for about 45–55 minutes.
  7. Check with a skewer.
  8. Once cooled, dust with powdered sugar or drizzle with icing.

For a Perfect Result

For extra moisture, add 2–3 tablespoons of sour cream or a handful of raisins. It also tastes great with chopped chocolate.
