Baked apple and pumpkin soup
Cook a delicious autumn soup for your loved ones, which will warm you up nicely during claudy days and surprise you with a perfectly balanced combination of sweet and salty taste.

Ingredients: 3 apples, 1 butternut squash, 2 tablespoons of olive oil, 1 large potato, 1 liter of vegetable broth, 100 ml of whipping cream, 2 tablespoons of butter, salt to taste, ground black pepper and nutmeg
How to do it:
- Peel the apples and pumpkin and cut them into larger slices, spread them on a baking sheet lined with baking paper, drizzle with oil and salt.
- Bake in the oven for approx. 30 minutes at a temperature of 220 0C.
- Pour the baked potatoes and pumpkin into the pot, add the cubed cleaned and cut potato, cover with broth and top up with water.
- Bring the soup to a boil, turn off the heat and let everything cook together for about 30 minutes.
- Then mix everything with an immersion blender. Soften the cream soup with cream and butter and season with salt, pepper and a pinch of nutmeg.
- Before serving, we recommend pouring a little pumpkin or olive oil on it and sprinkling it with roasted pumpkin seeds.
