Baked apple and pumpkin soup

Cook a delicious autumn soup for your loved ones, which will warm you up nicely during claudy days and surprise you with a perfectly balanced combination of sweet and salty taste.

reparation of the soup:: 60 minutes

Ingredients: 3 apples, 1 butternut squash, 2 tablespoons of olive oil, 1 large potato, 1 liter of vegetable broth, 100 ml of whipping cream, 2 tablespoons of butter, salt to taste, ground black pepper and nutmeg

How to do it: 

  1. Peel the apples and pumpkin and cut them into larger slices, spread them on a baking sheet lined with baking paper, drizzle with oil and salt.
  2. Bake in the oven for approx. 30 minutes at a temperature of 220 0C.
  3. Pour the baked potatoes and pumpkin into the pot, add the cubed cleaned and cut potato, cover with broth and top up with water.
  4. Bring the soup to a boil, turn off the heat and let everything cook together for about 30 minutes.
  5. Then mix everything with an immersion blender. Soften the cream soup with cream and butter and season with salt, pepper and a pinch of nutmeg.
  6. Before serving, we recommend pouring a little pumpkin or olive oil on it and sprinkling it with roasted pumpkin seeds.
